Delicious Leftover Spaghetti Recipe with Fried Eggs

Super crunchy noodles full of fantastic flavours, the eggs add a beautiful, rich, taste.

What You Need

Leftover spaghetti enough for two.

One medium-sized onion, red or white.

1 cup of cabbage.

1 large garlic clove.

4 tablespoons olive oil.

Salt and pepper.

Two eggs.

Equipment

1 large frying pan.

1 small frying pan.

Prepare Ahead

Take your cabbage and slice thinly, set aside.

Peel your onion, slice thinly, set aside.

Peel your garlic clove, mince, set aside.


Method

Take your two frying pans.

In the small pan add one tablespoon of oil. Turn heat to medium, once the oil shimmers, fry your eggs.

In the large pan add three tablespoons of the olive oil, place on stove top, set heat to medium. Once the oil shimmers, add the cabbage, garlic, cooked onions, season with salt and pepper. Now mix everything together. When the cabbage and onions are slightly cooked, about three to four minutes, add the spaghetti. Continue frying until the bottom part of the spaghetti has a nice light brown look. Then flip it so the other side is the same.

Divide the spaghetti into two portions, plate and add the fried egg to each plate.

Now that was easy, enjoy your super-duper leftover dinner.
