Tasting Notes
This dinner for two is bursting with flavours and takes the ordinary to the extraordinary.
Scrumptious noodles with a great fragrant curry sauce pair well with shrimps bursting with garlic, ginger, honey and lime flavours.
A dish to die for.
What You Need
20 small shrimps.
3 tablespoons of honey.
2 garlic cloves.
5 tablespoons of fresh ginger.
1 lime.
1 small onion.
1 red bell pepper.
2 tablespoons of vegetable oil.
3 tablespoons of yellow curry paste.
Five tablespoons of fish sauce.
1 regular-sized can of coconut milk.
1 tablespoon cornstarch.
1 package of rice noodles.
Equipment
2 medium-sized bowls.
1 large frying pan.
1 small pot.
1 medium pot.
Method
Put your shrimps, 3 tablespoons honey, 1 garlic clove sliced, 2 tablespoons of minced ginger, zest from half a lime, salt and pepper, into a bowl and mix well.
Set aside and marinate for 1 hour.
Cut your 1 onion into small cubes, and do the same with your 1 bell pepper.
Slice your 1 garlic clove into little chunks and mince your 3 tablespoons of ginger.
Heat up a frying pan on medium heat and add your 2 tablespoons of oil.
Now add your ingredients and cook for 5 minutes.
Once done, add your 3 tablespoons of yellow curry paste. Mix well and cook for three minutes.
Now add your 5 tablespoons of fish sauce. Mix well and cook for two minutes.
Set aside.
In a small pot add your 1 can of coconut milk and your 1 tablespoon of cornstarch and mix well.
Heat up the mixture on low heat, constantly stirring. After 2 minutes turn up the heat to medium or higher, stir constantly, till the mixture boils.
Turn heat to low and add your curry mixture, stirring well.
Place your rice noodles into a pot of boiling water and cook for 3 minutes. Then drain and place into one of the bowls full of cold water. Let sit for 1 minute and then drain.
Now add your curry sauce to your cooked noodles and heat up the mixture on medium heat, stir constantly to make sure it does not burn. Once hot, turn heat to low.
Take all your shrimps and place on small sheet pan, lined with parchment paper.
Heat your oven to 400 Fahrenheit.
Then put shrimps into the oven and cook for 10 minutes.
Once done, sprinkle the juice from 1 lime all over the shrimps.
Presto, you are ready to plate.
