Tasting Notes
This soup is for four and it is rich, hearty, fulfilling, all of it making for a great dinner.
What You Need
1/2 half of a large onion.
1/2 of a chorizo sausage.
4 large garlic cloves.
4 tablespoons tomato paste.
1 cup dry red wine.
1 large carrot.
4 tablespoons olive oil.
Salt and pepper.
3/4 pound of smoked Black Forest ham.
2 cans butter beans.
1 can of lentils.
4 cups chicken broth.
Equipment
I large pot. We use a Dutch oven.
1 wooden spoon.
Method
Cut your ham into two thick slices and then cut those slices into strips about 1/4 inch thick.
Cut your onion in slices and then dice finely.
Peel your garlic cloves and mince them.
Slice your carrot into medium slices.
Cut your chorizo into medium slices.
This portion of the recipe is the building flavours part.
Take your olive oil and add to the Dutch oven on medium heat. When the oil shimmers add your onions, garlic, chorizo, and carrot. Cook for 10 minutes, make sure the ingredients don’t burn, turn heat down if necessary. Then move all the ingredients to the sides, leaving a big opening in the middle, add your tomato paste and cook for another five minutes. With a wooden spoon move the paste around every once in a while.
Now add your beans,lentils, don’t rinse the beans.
Then add your broth and bring the mixture to a boil. Once boiling reduce to a simmer. Cook for about 40 minutes.
Then add the ham and cook for five minutes.
Slice your bread.
You are now ready to serve.
