This a a steak dinner for two you can’t help but love. Super delicious, easy to make and surprise, not that expensive. The secret is to use flank steak. It is relatively cheap, given the super high price of steak these days. But there is a trick you must follow – because the cut is thin it has to be cooked at a really high temperature and cooked quickly – two minutes each side and then let it rest for four minutes, covering it with a tent foil.

Tasting Notes
The steak with a nice char is moist and juicy, and it pairs well with earthy mushrooms and the potato salad that has a nice vinegary taste to it, coupled with pickles and onions. The salad a bit sweet with a hearty vinegraitte.

What You Need

3/4 pound or 12 ounces of flank steak. Flank steak is quite thin and you need to cook it quickly and on high heat, so it does not overcook.
12 nugget potatoes or 2 larges ones.
1/2 a small onion.
2 small dill pickles.
2/3 a pound regular white or brown mushrooms.
4 tablespoons olive oil.
2 tablespoons red wine vinegar.
Salt and pepper.

Equipment

Foil.

1 medium-sized pot.

2 medium-sized bowls.

1 frying pan or a BBQ.

Method
Cut your two pickles into small cubes.
Slice your onions into thin slices and then into smaller chunks
Take your nugget potatoes and cut in half. If using large potatoes cut into medium-sized cubes.
Place your potatoes into a medium pot, add water to cover the potatoes and then add some salt to them.
Boil for about 20 minutes, till soft and once done drain them.
Once completed put your potatoes back into the pot and back on to the stove toss them around a bit. This will ensure most of the moisture out of the potatoes is gone.
Now put your still warm potatoes into the bowl, add your onions, pickles, salt and pepper to taste, your vinegar and 3 tablespoons of your olive oil.
Mix well and set aside.
Take your mushrooms and cut into half. And here is a great way to cook them. Use no oil or butter but place them into a medium sized frying pan on medium heat. Cook for five minutes or so, till the juices come out of the mushrooms and they have developed a nice brown colour. Season with salt and pepper. Cooking them this way ensures that wonderful earthy mushroom taste is still there and the mushrooms are not saturated with a lot of oil and or butter.

Preheat your oven at 450 degrees Fahrenheit, using the broil setting. Place the oven rack at the highest level. Place your steak on a sheet of foil and then put into the pre-heated oven. Cook each side for 2 minutes. Your steak will be medium rare. Now take your steak, put in on a plate and cover with foil for 4 minutes. After that take your steak and put it on your dinner plate.


Take your oranges – peel them and cut into slices. Likewise take your peeled one quarter red onion and slice thinly. Add everything into a medium-sized bowl, then add your vinegar and olive oil, mix well. Add salt and pepper to taste.
Take your steak and cut into half.
Season generously with salt and pepper.

Presto, you are now ready to serve and eat.
