What You Need
1 1/2 pounds of pork back ribs. They usually come in slabs and can vary a bit in weight.
We found that one slab was good enough for two of us.
A pot large enough so that the ribs can be covered in water.
1 cup ketchup.
2 tablespoons brown sugar.
1 garlic clove minced.
2 tablespoons hot sauce.
2 fresh corns on the cob.
1/2 pound asparagus.
2 large potatoes.
1 small green pepper.
3 slices of bacon.
Method
Take the bacon slices and fry to a crisp. Once cool crumble the bacon and set aside. Save the bacon fat for the potatoes.
Cut up the green pepper into small thin slices.
Cut the potatoes into small cubes and pour the bacon fat over them and mix well in a small bowl. Set aside.
Now take your ketchup, sugar, hot sauce, minced garlic and mix well in a small bowl.
Take two fresh corn on the cob and season with salt and pepper.
Parboil your ribs in a large pot for 25 minutes till they are nice and soft but don’t fall off the bone.
Once done slather the BBQ sauce over them on both sides. Set aside.
Turn on your BBQ and once the temperature has hit 400 degrees Fahrenheit put your potatoes on – they will take about 35 minutes, turn them around often.
At the 10 minute mark put your ribs, the asparagus and your corn, on the BBQ, turning them over every five minutes or so to prevent them from burning.
At the 35 minute mark, take your ribs, corn, asparagus, potatoes, off the BBQ.
Sprinkle the peppers and bacon bits over the potatoes and scrape the corn off the husks.
You are ready to start serving.
