Simple, Fast, Flavoursome Pork Sausage Dinner
We all have been there.
Coming home after a hectic day.
The big question – what to have for dinner?
We have the answer – a quick pork sausage, pan fried potatoes with red and green Bell peppers along with a great refreshing mango salad.
This is pure comfort food and you can have it ready in 30 minutes or less.
What You Need
1 pork sausage.
Make sure they are a decent size, not those skinny little numbers so popular for breakfast.
1 medium-sized red and green Bell pepper, diced, medium size.
2 medium-sized potatoes, sliced.
4 tablespoons olive oil.
And depending how hungry you are or how much of a big eater you are you could have up to three sausages.
1 medium sized fresh mango, peeled and sliced.
1 lime or lemon, cut in half.
Salt and pepper.
Method
Pre-heat a cast iron frying pan or any other frying pan on high heat.
Once hot turn down the heat to medium and add your oil.
Now add you potatoes, season with salt and pepper. Move your potatoes around a few times.
At the 15 minute mark add your Bell peppers. Keep stirring them around and your potatoes every once in a while.
Once 20 minutes have elapsed, add your sausage(s).
Cook for another 8 minutes or so and turning the sausage around.
Take your sliced mango and put it into a salad bowl and squeeze the juice of one half of the lime or lemon over it
Tasting Notes
The sausage with its earthy robust taste pairs nicely with those yummy pan-friend potatoes and those Bell peppers. If you like you could have some mustard and or chutney on the side for the sausage. And added benefit is that some of those lovely juice will have mingled with the potatoes and Bell peppers.
And clean up is a cinch.
The mango salad is clean and refreshing, pairing perfectly with the rich and robust sausage dish.
