EASY, DELICIOUS, SLOW COOKER CHILLI CON CARNE
This recipe is for eight.
And the best part is you can freeze it.
Two pounds of ground beef.
One-half pound of pork sausages.
Three tablespoons of olive oil.
Two medium white onions, diced.
One package of store bought chilli mix.
Two teaspoons of minced garlic.
Salt and pepper to taste.
Heat a large pan and add the olive oil.
Once hot, add the sausages taken out of their casing.
Then add the onions and the ground beef.
Stir and cook for eight minutes or so over medium high heat. You want to make sure the meat is a bit on the brown side because it will improve the flavour of the chilli con carne.
Once cooked put the spice mixture in your slow cooker.
Add a large can of diced tomatoes with their juice.
Then add two cans of kidney beans, rinsed and washed.
Add two teaspoons of minced garlic.
Stir and cook for eight hours on high heat in your slow cooker.
We found that the cooked chilli con carne wasn’t hot enough for our tastes so we added an additional one-half of the spice mixture to the chilli con carne.
Once cooked, serve with grated cheddar cheese over each portion and some cut up green onions. You could also add a dollop of sour cream or yogurt if you don’t want the cheese or the onions.
Serve garlic bread on the side.
P.S. if you want to make your own spice mixture for your chilli con carne, here it is:
- 1 – 2 tsp cayenne pepper
- 4 tsp paprika powder.
- 5 tsp cumin powder.
- 2 tsp onion powder.
- 2 tsp oregano.
- 2 tablespoons of hot sauce
- One you have mixed it all up take a bit of meat mixture from the slow cooker and add a bit of the spice mixture to it, taste.
- Adjust the seasoning to your liking if need be.
