What You Need

1/2 pound ground beef.

1/2 pound ground pork

1 egg.

1/4 cup breadcrumbs.

2 teaspoons Worcestershire sauce.

2 teaspoons salt.

1 teaspoon pepper.

3 slices of pancetta.

2 slices of Gouda cheese.

2 thick slices of red onion.

1 tablespoon olive oil.

Two brioche hamburger buns. 

3 corn cobs.

I large tomato.

Method

Slice your tomato in medium slices.

Fry the pancetta slices till they are crispy. Once done drain the fat, set aside.

Now chop the pancetta into small pieces.

In a medium-sized bowl add the pork, beef, one egg, pancetta pieces, salt, pepper.

Mix everything lightly with your hands. Don’t over mix as the hamburgers will become dense. Once mixed, make two hamburgers.

With a pastry brush lightly coat the onion slices with the fat from the pancetta on both sides.

Heat your BBQ till it hits a temperature of 400 degrees.

Place the hamburgers, the corn cobs and the onion slices on the BBQ.

Turn the corn cobs every few minutes, ensuring they cook evenly.

Cook the hamburger and onions for four minutes, each side.

Leave the corn on the BBQ for another two minutes. Then take off and set aside.

Then place the hamburgers and onions on tin foil large enough to make a packet out of it. Close the tin foil and let everything rest for five minutes.

Once done you are ready to plate.

Place each hamburger on half a bun, add one Gouda slice, then add one of the onion slices, top with a tomato slice. Add the other half of the bun to the hamburger.

You are now ready to serve.
