This delicious salad makes for a great dinner for two with great flavours – scrumptious shrimps, crunchy, tart, apples, earthy peas, silky beans, and a fresh baguette.

What You Need

Eight large shrimps with tails on and deveined.

Two Granny Smith apples.

One can of white beans.

Two cups of freshly shucked green peas (fresh preferably), if not frozen.

One baguette.

Five parsley sprigs.

Three tablespoons of fresh lemon juice.

Two tablespoons of olive oil.

Salt and pepper.

Method

Take a medium-sized pot, fill one half with water and bring to a full boil.

Add your eight shrimps and remove the pot from the stove top, leave shrimps in the pot for three minutes. Take the shrimps out of the pot and place the shrimps in a bath of ice water. Leave in for a few minutes and then drain.

Core your two apples and cut into medium slices. Set aside.

Chop your parsley.

Take your peas, put into a small bowl and pour boiling water over them. Let the peas sit for four minutes, then drain.

Take your can of white beans, drain and rinse with cold water. Add the beans to a medium-sized bowl.

Now add your beans, peas, parsley, apples, into a medium-sized bowl. Then add the lemon juice, olive oil, mix thoroughly. Season with salt and pepper to taste.

Take your baguette and cut into bite-size slices.

You are now ready to plate.
