This soup is enough for four people. It’s a snap to make. In fact, it’s ready in 20 minutes. It makes for a filling dinner, along with a crusty baguette and a nice light salad.
Tasting Notes
Rich and smooth with hearty flavours, this soup is a knockout. The slightly smoky flavour adds another flavour dimension to this soul satisfying dish of goodness. The crunchy bread pairs well with the soup and the light salad cuts through the richness and creamy soup.
The soup needs no salt because the pancetta is salty.
What You Need
2 cans of white beans also known as cannellini beans.
1/2 pound of pancetta, a non-smoked bacon.
2 medium carrots.
2 stalks of celery.
1 medium white onion.
8 cups of chicken broth.
1 cup of grated cheddar cheese.
1 small-sized Chorizo sausage.
1/2 cup Orzo.
1 baguette sliced in half.
6 tablespoons of olive oil.
1 1/2 tablespoons of white or red wine vinegars.
1 small cucumber.
2 regular-sized tomatoes.
4 cups of torn Romaine lettuce.
Method
Take your pancetta and cut into small slices. Take a big pot and turn your stove heat to medium high and throw your sliced pancetta into the pot.
Take your carrots and celery and slice into medium sized slices. Once done throw into the pot.
Stir the mixture every once in a while and if needed turn down the heat to make sure the pancetta does not burn. The mixture is done when the bottom of the pot turns a bit brown and also is brown around the edges.
Keep stirring the mixture.
Open your cans of beans and rinse in cold water.
Once done put the beans into the pot.
Stir frequently.
Now add your 8 cups of chicken broth and bring to a boil.
Cut your Chorizo sausages into thin strips and put in the big pot.
Do the same with your cheese.
Add your orzo.
Stir and let it all simmer for about six minutes.
Set aside.
The Salad
Take your Romaine lettuce and put into a medium-sized bowl.
Slice the cucumber into medium sized-slices.
Take your tomatoes and cut into small chunks.
Add everything into a bowl.
Add 4 tablespoons of olive oil and 1 1/2 tablespoons of the vinegar.
Add salt and pepper to taste.
Mix everything.
The Bread
Take 2 tablespoons of olive oil and brush your two baguette slices with it.
Put your bread into a pre-heated oven at 400 degrees Fahrenheit and bake for about 15 minutes or so; until the bread has turned nice and brown.
Presto your dinner is ready to serve.
