SUPER DELICIOUS PEASANT SOUP – BLACK BEANS, CHORIZO, ONIONS

This hearty, delicious comfort soup is a snap to make and serves two.

Tasting Notes
Hearty, rich, with a bit of heat and smoke, this simple soup will tickle your taste buds.

What You Need
1 large onion.
1 medium-sized Chorizo, a Spanish sausage with great flavours, slightly smoked, with some chilli’s in it to give it some heat.
1 can of black beans.
1 clove of garlic.
3 tablespoons olive oil.
1 teaspoon cumin.
1 teaspoon salt.
11/2 cup chicken stock or broth.

Method
Open your black beans and rinse under cold water.
Put your olive oil in a medium pot and heat up the oil on medium heat.
Cut your Chorizo into half and then cut up into small pieces.
Also slice and dice your onion into small pieces.
Take your garlic clove and cut up into small pieces.
Once the oil is hot add your cut-up Chorizo to the pot. Cook for five minutes or so till the Chorizo is nice and browned.
Now add your onions, cook for another five minute, stirring them around every once in a while.
Watch your pot so the mixture does not burn.
Then add your garlic and cook for one minute.
Now add your black beans, salt and cumin.
Stir around and cook for about four minutes.
Now add your chicken stock, bring to a boil, then reduce heat to a simmer and cook for 15 minutes.

Presto, your soup is ready.
