





This hearty soup is a snap to make and you only need a few everyday ingredients. You can serve four with this recipe.
Tasting Notes
Rich, hearty, soul satisfying, soup this is perfect comfort food. And you will be amazed how tasty and yummylicious it is. And a nice bright, fresh salad, with some crusty bread, add up to a great meal.
What You Need
1 small baguette.
1 1/2 white onions.
1 medium cucumber
2 tomatoes
1 tablespoon white vinegar
1/2 pound minced pork sausage meat.
12 slices of bacon.
4 garlic cloves.
8 tablespoons olive oil.
2 medium-sized carrots.
1 celery stalk.
1 can cannellini beans.
1 can lentils.
1 medium cabbage.
10 cups of water.
4 tablespoons of tomato paste.
3 tablespoons of Harissa paste, a spicy Moroccan ingredient.
1/4 cup of Romano cheese.
Method
Slice your baguette in half and place in a pre-heated oven at 400 degrees Fahrenheit and bake for about 15 minutes or so, till the baguette turns a dark brow.
Slice your cucumber, tomatoes, and one-half of your onion into small chunks.
Add to a small bowl and then add 2 tablespoons of olive oil, 1 tablespoon of vinegar and add salt and pepper to taste, mix well.
Pan fry your sausage meat.
Cut your cabbage into thin slices and make sure you cut out the core of the cabbage.
Place a large pot on your stove and turn heat to medium.
Add 4 tablespoons of the olive oil.
In the meantime slice your bacon, onion, celery, carrots and garlic into small chunks.
Place your bacon, onion and garlic into a food processor and purée till smooth.
Then put the whole mixture into your stove top pot.
Cook the whole mixture mixture for around 3 minutes and the bacon has rendered some of the fat. Keep stirring the mixture around while cooking.
Then add the carrot and celery mixture and cook for 2 minutes.
Once done, make an opening in the middle of the pot and add your tomato paste. Swirl the tomato paste around till it turns a bit dark, around two minutes. This deepens the flavour of the paste.
Once done add your water and mix everything and bring to a boil.
In the meantime open your cans of lentils and beans. Rinse and then add to the pot. Cook for 5 minutes.
Add your Harissa paste.
Add your sausage meat.
Now add your cabbage and cook everything for 15 minutes.
Now add salt to taste.
Mix everything thoroughly. Cover the pot and turn off the heat.
Now grate your Romano cheese.
You are ready to plate.
Divide the soup into 4 large bowls and sprinkle the Romano cheese on each one.
And finally, take your 2 tablespoons of olive oil and drizzle over the cheese.
Plate your salad and arrange the bread on a small platter.
