Quick and Easy Pasta Salad Recipe

Tasting Notes

This serves two. Light, great flavours, are the hallmarks of this pasta salad. All it requires are four everyday ingredients and you’re good to go.

What You Need

2 cups of fusilli pasta.

4 small pork sausages.

1 red Bell pepper.

2 sundried tomatoes, plus 2 tablespoons of their juice.

2 tablespoons olive oil.

2 slices of sourdough bread.

Equipment

1 medium frying pan.

1 large bowl.

1 small bowl.

1 medium pot.

Method

Cut open your Bell pepper in half, remove all the insides. Then cut into strips. Set aside in a small bowl.

Chop up your sun dried tomatoes. Add to the bowl with the peppers.

Take the sausage meat out of their casing and form into small balls. No need to add oil as the sausages have lots of fat in them, start frying at low and gradually up the heat, this way the sausage balls won’t burn. Fry them till their done about six minutes. Then add your peppers, sun dried tomatoes. Mix in the pan, set aside.

Cook the pasta for eight minutes in salted water. Once done drain but before that reserve 1/4 of a cup of the pasta water. Add the pasta to the frying pan and the pasta water, add the sun dried tomato juice. Mix well. Taste and salt and pepper to taste.

Toast your two slices of bread, once done cut into pieces.

You are now ready to serve.
