Tasting Notes
This serves four people easily. I love this cake, made it twice already. I am not much of a baker but this cake anyone can make, it’s fast and easy, and above all – it’s a great dessert.
What You Need
1 cup all-purpose flour.
1 teaspoon baking powder.
¼ teaspoon salt.
½ cup unsalted room temperature butter.
2/3 cup granulated sugar, and a bit extra for sprinkling over cake.
2 eggs.
1 teaspoon vanilla extract.
2 Granny Smith apples, peeled, cored and cut into thin slices.
Confectioners’ sugar for decorating the cake.
Equipment
1 spatula.
2 small bowls.
1 medium-sized bowl.
1 cake pan – 9 inch in diameter, springform or glass.
1 handheld mixer.
Method
Grease all sides of the baking springform with butter.
Peel, core your apples, then cut into thin slices. Set aside in a small bowl.
In your other small bowl, whisk together the flour, baking powder and salt.
In the medium bowl, add the butter, sugar and eggs. Using the handheld mixer, beat the ingredients till light and fluffy, add the vanilla. Beat the mixture and add the flour mixture, continue beating for a minute or so. Then fold in your sliced apples.
Once done place the whole mixture into the baking springform, evening it out with a spatula. Now sprinkle the white sugar over the top and then place into a pre-heated oven of 350 degrees Farenheit.
Bake for about 40 minutes or until the top is golden brown. The cake is ready when, if put a toothpick in the middle of the cake and it comes out clean.
Suggestions
There are three ways to serve the cake. We tried all three.
- Just sprinkle some confectioners sugar over it.
- Serve it with a dollop of whipping cream with a touch of vanilla added.
- Use a scoop of vanilla ice cream on top.
- Our favourite was number 1 because you really tasted this superb cake in all its simplicity.
