Tasting Notes
This dinner serves two.
Bold flavours – slightly spicy, chilli sauce, mixed with mirin, a sweet Japanese vinegar, soya sauce adding that salty component, a bit of sesame oil, bringing it all together.
The tuna, rich and succulent, the noodles and red onions slightly crunchy, the scallions providing a nice earthy taste.
Simple, easy, fast, delicious, that’s the tuna poke, noodle, dinner.
What You Need
1 pound tuna.
1/2 of a medium-sized red onion.
1/2 pound rice noodles.
2 scallions.
6 tablespoons soya sauce.
2 tablespoons sesame oil.
2 teaspoons Mirin, a Japanese vinegar.
2 teaspoons chile sauce.
2 tablespoons vegetable oil.
Equipment
2 medium bowls.
2 small bowls.
1 pot large enough for the noodles.
1 colander.
Method
Cut the tuna – against the grain – into strips about 3/4 inch thick and then cut the slices into 3/4 inch cubes, place into medium-sized bowl. Set aside.
Place the soya sauce, the mirin, the sesame oil, chili sauce into a small bowl. mix well.
Cut your scallions into small slices, using both the green and white part.
Now pour half of the sauce over the tuna, mix well and refrigerate for 90 minutes. Then add the scallions. Mix well.
Now place your noodles into a pot of boiling water and cook in boiling water for six to eight minutes. Drain the noodles with your colander and pour cold water over them to prevent them from sticking together. Now place in a medium bowl. Then add two tablespoons of vegetable oil over the noodles and mix well. This will prevent them from sticking as they will if you won’t.
Now add the rest of your sauce over the noodles, mix well. Then add the tuna, mix well.
You are now ready to plate.
