Splendiferous Lemon -Yogurt Cake

This cake serves six. It’s easy to make with few ingredients and is light, moist, the delicious flavours of that lemon flavour is subtle and spot on. We served two ways – just by itself and with fresh strawberries, the sweet berries pair well with the delicate flavour of the not-too sweet cake.

What You Need For The Lemon Crumbs

1 1/2 tablespoons melted butter.

1/4 cup all purpose flour.

2 tablespoons granulated sugar.

Zest from one large lemon.

Equipment, Method For The Lemon Crumbs

In a small bowl combine all the ingredients, mix well. Set aside.

What You Need For The Cake

1 1/2 cups of sifted all purpose flour.

2 teaspoons baking powder.

3/4 cup sugar.

Zest of one large lemon.

1/4 teaspoon salt.

1/2 cup vegetable oil.

2 large eggs.

1 teaspoon vanilla extract.

2 tablespoons fresh lemon juice.

1/2 cup full fat Greek yogurt.

Equipment, Method For The Cake

You will need two bowels, one for the dry ingredients, the other one for the wet ingredients.

Add all your dry ingredients into one bowel and mix well using a whisk.

To the other bowel add your eggs, mix, then the vanilla, then the lemon juice.

Now take your dry ingredients and add to the bowel with the wet ingredients gradually and at the same time add your yogurt gradually.

Now take an eight-inch cake pan, we used a square one, but you can also use a round one, and smear it with butter all over. Now add parchment paper to the pan, making sure the bottom of the pan and the sides are covered with. Then repeat the process of smearing butter over everything.

Now pour the cake batter into the pan.

Then take the bowel with the lemon crumbs mixture and using your hands sprinkle small crumbs over the cake batter.

Once done place in a preheated oven of 350 degrees Farenheit and bake for about 30 to 35 minutes. The cake is ready when you pierce it with a toothpick and it comes out clean.

Take the cake out of the oven and place on a rack to cool.

At this point – using a pastry brush – coat the cake with the lemon glaze.

1/4 cup powdered sugar

2 tablespoons fresh lemon juice.

Using a small bowl add the sugar and lemon juice, mix well.

You are now ready to serve your cake.
