This scrumptious dinner is light, healthy, and delicious.
It is served with olive oil poached tomatoes and peppers.
Grilled asparagus.
A grilled garlic baguette.
A mango, cucumber salad.

What You Need
Two small halibut fillets.
One cup of olive oil poached cherry tomatoes and peppers.
A bunch of asparagus.
One small baguette.
Three quarters cup of good olive oil.
Three small cucumbers.
One stalk of green onion.
One regular-sized mango.
One half cup of cilantro. If you don’t like it, you can leave it out.
Two tablespoons of any vinegar. We used red-wine vinegar.
The juice of one lime.
One garlic clove.


Mango cucumber salad
Cut up your mango into slices and then cut up into small chunks.
Cut up your cucumbers into slices and you don’t have to peel them. If you only have big cucumbers they will work, but peel them.
Cut up your green onion.
Take a handful of cilantro and chop up, stalks and leaves.
Add your ingredients into a salad bowl.
Squeeze the juice of one lime over your ingredients.
Add two tablespoons of vinegar and olive oil.
Season, to taste, with salt and pepper.

Poached cherry tomatoes and peppers.
Put one-half cup of olive oil in a small pot.
Reserve the rest for your salad and asparagus.
Add eight cherry tomatoes and two small peppers, cut up in slices.
Add a pinch of sugar, this will bring out the sweetness of the tomatoes.
Add salt and pepper, to taste.
Bring the mixture to a boil on the stove and then turn down to simmer, till the tomatoes have burst.
Set aside.

Place asparagus on a baking sheet, coat asparagus evenly with olive oil.
Add salt and pepper.
Place in a pre-heated oven at 375 and cook for 20 minutes.

The Halibut
Season the halibut with salt and pepper
Pre-heat a frying pan on medium high heat.
Once hot, add two tablespoons of olive oil.
Let heat for another minute or two.
Then add the halibut with skin down.
Cook for three minutes.
Take the halibut and put in the oven for 15 minutes at 375.
The exact oven cooking time will depend on the thickness of the fillets. If they are one inch think they will be ready in 15 minutes.
You can put the halibut into the oven with your asparagus five minutes after you have put your asparagus in.
Towards the end add your tomato, pepper mixture into the same pan with your halibut.

The Baguette
Slice in half.
Place into the oven along with your asparagus about eight minutes before the asparagus is done.
Once done take out of the oven.
Take your garlic clove and rub your baguette slices with it.

You are now ready to plate.
