Simple, easy, fast, delicious, that’s the tuna poke, noodle, dinner.

What You Need

1/2 pound tuna.

1/2 of a medium-sized red onion.

1/2 pound rice noodles.

2 scallions.

6 tablespoons soya sauce.

2 tablespoons sesame oil.

2 teaspoons Mirin, a Japanese vinegar.

2 teaspoons chile sauce.

2 tablespoons vegetable oil.

Method

Cut the tuna – against the grain – into strips about 3/4 inch thick and then cut the slices into 3/4 in cubes. place into medium-sized bowl. Set aside.

Place the soya sauce, the mirin, the sesame oil, chili sauce into a small bowl. mix well.

Cut your scallions into small slices, using both the green and white part.

Now pour half of the sauce over the tuna, mix well and refrigerate for 90 minutes. Then add the scallions. Mix well.

Now place your noodles into a pot of boiling water and cook in boiling water for six to eight minutes. Drain and pour cold water over them to prevent them from sticking together. Now place in a medium bowl. Then add two tablespoons of vegetable oil over the noodles and mix well. This will prevent them from sticking as they are won’t to do.

Now add the rest of your sauce over the noodles, mix well.

You are now ready to plate.
