Tasting Notes

Who would think that this simple pasta dinner would be delicious.

What You Need

2 slices of whole wheat toast.

1/2 pound of tagliatelle.

6 tablespoons of unsalted butter.

1 tablespoon fresh cracked pepper.

1 cup of finely grated Parmesan or Grana Padano cheese.

2 tablespoons of parsley.

12 snap peas.

1 cup of water.


Take the snap peas and cut both ends off. This will expose what looks like a dark thread, grab it, pulling back till it has been removed from each snap pea.

Once done, put the water in a small pan and heat up to a simmer, then add your snap peas and cook for about five minutes. Once done, drain and then add the butter, swirling the peas around in the butter.

Place your tagliatelle in a big pot of salted water. Let it cook in a rolling boil for anywhere from 10 to 12 minutes. As you get to the 10-minute mark taste a bit of the pasta making sure it’s ready, ready means it is al dente sort of toothsome.

If not, cook a bit longer.

Now scoop out a cup of water from the pot, set aside.

Drain the pasta and immediately and return to the pot, adding the saved cup of pasta water, then add the butter and mix well.
