THE AMAZING DINNER THAT IS BEYOND YUMMYLICIOUS – 3 DISHES

This dinner is different. Perfect for when you want something light.
It serves two. It’s fast and easy and dishes up a variety of different flavours and textures.

Tasting a Notes
The smoked salmon bagel is rich and unctuous with the capers adding a nice briny touch, the onions providing crunch and depth of flavour.
The salad is simple, the corn sweet, the beans earthy and the lime juice adds a nice bright flavour.
And the pita is crunchy with a nice char smoky flavour, nicely complemented with the flavoursome Boursin cheese, the sweet tomatoes and the wonderful basil, add up to wonderful tastes and textures.

What You Need
1 large tomato.
1 pita bread.
3 to 4 leaves of fresh basil.
6 tablespoons of Boursin cheese. It’s a cream cheese from France and comes in different flavours. If you don’t have any or can’t get any, use any flavoured cream cheese.
1 mango.
1 can of black beans.
1 can of corn. Make sure it is corn kernels and not creamed corn.
1 lime.
Salt and pepper.
Two fresh bagels.
24 capers.
8 tablespoons of cream cheese.
4 slices of smoked salmon.
Slices of red onions.
1 small white onion.

Method
Smoked Salmon Bagel
Take your 2 bagels and cut into half.
Spread your cream cheese all over the four bagel pieces.
Now take your sliced salmon and divide evenly over the bagel slices.
Place your capers on each slice and then add your red onion slices.
Season with pepper only.

Pita Bread Tomato-Cheese
Slice your tomato into thick slices.
Take your basil leaves and break them apart.
Take your pita bread and grill over an open flame on your gas stove till you have some char marks on both sides. If you don’t have a gas oven, put into a regular oven at 450 degrees Fahrenheit and it’s ready when char marks appear.
Or you also use a BBQ.
Once your pita bread is ready spread your cheese all over it.
Add your tomato slices and then your basil.
Season with salt and pepper to taste.

Black Bean-Corn Salad
Cut your small white onion into cubes.
Open your cans of corn and black beans and rinse with cold water. Let them drain and place in a medium bowl.
Take your mango and cut into cubes.
Now add the mango cubes to the bowl.
Add your onions to the bowl.
Add salt and pepper to taste.
Cut your lime in half and squeeze the juice over the mixture.
Mix well.

You are ready to plate.
Easy and delish.
