This dinner serves two. It is quick and easy and yummylicious.
And it’s easy. Everything, except the pork chops, is roasted in one pan in the oven, all at the same time.
Tasting Notes
A beautiful Greek marinade adds a myriad of flavour, garlicky, citrusy and robust. And the char from the BBQ adds an extra delicious flavour dimension.
What You Need
2 pork chops, any kind will do. Ours had the bone in.
16 small button mushrooms.
6 green onions.
20 small potatoes, if you don’t have small potatoes, any size potatoes will do, just cut them into small chunks.
6 asparagus stalks.
10 cherry tomatoes.
2 small cucumbers.
1/2 of a small onion.
8 tablespoons olive oil.
1 tablespoon white vinegar.
Salt and pepper.
1 tablespoons basil – dried.
1 tablespoons dill – dried.
2 tablespoons garlic powder.
1 tablespoons onion flakes.
2 tablespoons oregano.
Method
Cut your tomatoes in half and cut your cucumbers into medium-sized slices.
Cut you onion into small cubes.
Take your tomatoes, cucumbers, onions and put into a bowl.
Add 1 tablespoon of the vinegar and 2 tablespoons of the oil into the bowl, season to taste with salt and pepper.
Mix well and set aside.
In a small bowl mix all your spices.
Then rub the spice mixture all over the pork chops.
Season with salt and pepper and pat all over the pork chops.
Set aside.
In another bowl add 6 tablespoons of olive oil and add salt and pepper.
Now take your potatoes and rub the olive oil all over them.
Repeat the procedure with your mushrooms, green onions and asparagus.
Place veggies and potatoes in a large sheet pan.
Turn your oven temperature to 375 degrees Fahrenheit and once the temperature has been reached put your sheet pan into the oven and cook for 30 minutes.
At the 15-minute mark turn your BBQ on to high. Once hot, put your pork chops on the grill.
Cook for 12 minutes, each side for 6 minutes. Once done turn off the BBQ off and let the chops rest for 3 minutes.
At the 30-minute mark take out your potatoes and vegetables out of the oven.
Also take the chops off the BBQ.
Presto, you are now ready to plate.
Easy and delish.
