Shrimp Dinner

DELICIOUS, SHRIMP DINNER, BAGUETTE, SINFUL DESSERT
This is a light dinner for two, with some sinful dessert.

Tasting Notes
The shrimp are light, refreshing, with a bit of olive oil and pepper, nestled in a crunchy cup of iceberg lettuce with a few slices of cherry tomatoes sprinkled with a bit of olive oil. The baguette adds nice crunch. And the dessert to finish the meal – with choices – is decadent and ends a terrific meal.

What You Need
8 large frozen, deveined large shrimps.
1/2 a lemon.
1 bay leaf.
6 peppercorns.
1 small baguette.
3 tablespoons of olive oil.
Salt and pepper.
1/2 a small iceberg lettuce.
6 small cherry tomatoes.
1/2 cup ketchup.
2 tablespoons horseradish.

Method
Shrimps
Take your frozen shrimp and in a sieve run them under cold water until defrosted.
This should take about 6 minutes or so.
Once unfrozen pat the shrimps dry with paper towels.
Fill a medium-sized pot, three-quarters full with water.
Add your bay leaf, your peppercorns, and squeeze the juice from the lemon into the pot.
Bring to a boil.
Now add your shrimps.
Take pot off the stove and cover with a lid.
After five minutes the shrimps should be ready.
Place them in a bowl of ice water and leave them in there for two minutes.
Drain the shrimps and pat dry with paper towels and then set aside.

Method
Shrimp Sauce
Take your 1/2 cup ketchup, 2 tablespoons horseradish and mix thoroughly. Add salt and pepper to taste.

Salad Cup
Take your iceberg lettuce and peel off the leaves, use enough of them so that you have a nice cup.
Cut up your tomatoes and place at the edge of the lettuce.
Add salt and pepper to taste.
Take 2 tablespoons of your olive oil and sprinkle over the lettuce and tomatoes.
Then add 4 shrimps to each lettuce cup.
Now put a bit of the tomato sauce over the shrimp.
Set aside.

Baguette
Slice the baguette in half and brush each side with the 1 tablespoon of the olive oil.
Sprinkle with a bit of salt and pepper.
Then put in a 425 degree Fahrenheit oven and bake for about 10 minutes or so, until the baguette has reached a nice brown colour.

These desserts were bought at a local bakery – pecan tarts, lemon tarts and one piece of chocolate cake.
Put everything on a platter – so you can choose which will be yours.
